How can I get full text of the email/SMS sent? (The Email/SMS Log only has the list of message sent.

iCare uses the AWS SES platform for emails and SMS messages. A transcript of the emails is not stored on the server.
The only way to access that is to add a CC to all or specific email notifications. Please see this article.
