We need to be able to sort a class by their Program name in order to print a classroom list. We tried in reports but it only lets you sort by room #

Dear User,
Use the Enrollments report for this purpose. Simply enter the Program name in the smart search bar to filter the list of children enrolled in that program. Please see this attached snip for reference.
